Amylase

Overview:
Amylase is an enzyme that breaks starch down into simpler sugars. Most of it is produced by the pancreas and the salivary glands, and a small amount circulates in the blood at all times. When the pancreas is inflamed or injured, more amylase than usual can enter the bloodstream, so the level rises. Amylase can also rise for other reasons, including salivary gland conditions and some medications, and a low level can occur where the pancreas has been damaged over a long period. Because amylase is not specific to the pancreas, results are usually interpreted alongside lipase and the person's symptoms.
